Standing Rigging

As far as I am aware, the standard rigging for a Viking is as shown in the picture, with fore and aft lower shrouds fixed to chain-plates on either side of the uppers. I have never seen a boat rigged as your you describe.
The upper shroud chain-plate is bolted to the main bulkhead while the lower fore chain-plate is bolted to the forward semi-bulkhead. The aft chain-plate is bolted to a knee which is glassed between the deck and the hull.
This arrangement allows the loads to be spread and permits control of mast bend. I don't think I'm qualified to say whether yours is adequate but only that it is most unusual for this boat.
